New perspectives on India and Nepal in Satkara

On Reguliersdwarsstraat in Amsterdam, the new Satkara restaurant brings together the cuisines of India and Nepal in a contemporary fine dining setting. Founders Thaneshwar Kandel, Narayan Acharya and Dinesh Aryal build upon their years of hospitality experience, but opt for a clearly more refined course here. Chefs Kapil Singh and Mohan Bishwakarma combine traditional curries, tandoor techniques and Nepalese flavours with modern presentation. During our visit, this proved to work out excellently: the food was genuinely good, with clear flavours and carefully constructed dishes. The hospitality was extraordinary and perhaps just as essential for the evening. The biggest surprise, however, was in the drinks menu – the Indian wines were a totally new discovery for us. The cocktail menu by mixologist Matteo Finotti closely connects with the spices and aromas from the kitchen. The interior adds its own story, featuring old oak floorboards from French train carriages and art inspired by Vedic philosophy. Satkara convincingly demonstrates how much room there still is to shed a new, refreshing light on Indian and Nepalese gastronomy in the Netherlands.
