Restaurant De Kas celebrates 25th anniversary with new cookbook

Over 100 vegetarian recipes for home cooks

De Kas at Home, the new cookbook from Restaurant De Kas, has been published to mark the 25th anniversary of the iconic Amsterdam restaurant. Awarded both a Michelin star and a Green Star, De Kas is known for its ‘from plant to plate’ philosophy, where vegetables, seasonality and local sourcing take centre stage. With De Kas at Home, you can bring that distinctive kitchen into your own home – accessible, inspiring and uncomplicated.

Vegetarian, bold in flavour and always guided by the rhythm of the seasons, exactly what you can expect from De Kas. Think mezze-style dining: vegetable dishes to share, filling the table generously and enjoyed together. A celebration of vegetables and the seasons in a pure and approachable way, with a light and fresh style of cooking.

The book features over 100 vegetarian recipes, from Rigatoni with cavolo nero, garlic, almond oil and Parmesan to Toast with melted brie, cherries and Greek basil. Barbecue dishes and accessible seasonal recipes are also included – without complicated techniques, but with a focus on simplicity, clarity and trust in the quality of the ingredients. Personal stories offer a glimpse into the world of De Kas, from kitchen and garden to the people behind it: chefs, growers and sommeliers.

De Kas at Home invites readers to place vegetables centre stage, without relying on hard-to-source ingredients. The book is suitable for both beginner home cooks and food lovers.

About Restaurant De Kas
Restaurant De Kas is located in Park Frankendael in Amsterdam East and is housed in a monumental greenhouse dating from 1927. Since 2001, De Kas has cooked in harmony with nature, using what the greenhouse, gardens and local growers provide. The seasons determine the menu, vegetables take centre stage and everything moves from plant to plate as quickly as possible. Ingredients are seasonal, local and organically grown.

Produce is harvested daily from the restaurant’s own gardens and from the Beemster region – what grows, shapes the menu. Sustainability is embedded in everything De Kas does. The restaurant has been awarded 16.5 points in the Gault & Millau guide, is listed in 50 Best Discovery and holds both a Green Star and a Michelin star.

About the chefs
Chefs Jos Timmer and Wim de Beer have led Restaurant De Kas since 2018 and are also its owners. Both gained extensive experience at leading restaurants such as Parkheuvel, Bolenius, Vermeer and Jamie Oliver. With their background, they continue the philosophy that has defined De Kas for 25 years, with a strong focus on seasonal cooking and sustainability.
